About this product
Thekua is the soul of Chhath puja in Bihar — a hand-pressed, deep-fried whole-wheat sweet, fragrant with fennel and ghee, that keeps for weeks without a single preservative. Ours is made by a women's collective from villages near Sitamarhi using our own A2 bilona ghee. The wooden moulds carve the petalled motif you'll recognise from any Bihari grandmother's kitchen.

How it's made
Whole wheat flour is kneaded with gur (jaggery) syrup, a generous spoon of our bilona ghee, crushed fennel and grated dry coconut into a stiff dough. Small balls are pressed into carved wooden moulds — each one bears a different floral pattern — then deep-fried slowly in ghee on low heat until deep amber. Cooled, dried, packed.
