Thick, round, crackling-flaky North-Indian biscuit. Methi, ajwain, crushed black pepper. Tea or pickle or both — mathri does not mind.
About this product
If nimki is the polite teatime guest, mathri is the loud uncle who shows up with stories. Thicker, sturdier, more aggressively spiced — and built to last a week of train journeys without losing its crunch. We use dried fenugreek leaves and crushed pepper alongside the usual ajwain, which gives ours a slightly more complex bite than the standard Delhi market version.

How it's made
Atta with a small portion of sooji for crunch, kneaded with ghee, dried methi, crushed pepper, ajwain and salt. Rested, rolled thick (about 4 mm), cut into rounds, pricked with a fork (this prevents puffing and creates the open layers), then fried at moderate heat until each one is golden and audible when tapped.
