About this product
Nimki is what you set out next to the kettle when family arrives unannounced. Flaky, salty, lightly spiced — a flour-and-ghee dough rolled paper-thin, scored into diamonds, and fried slowly until golden. Made by the same Sitamarhi women's collective that rolls our thekua, using our own bilona ghee in the dough and as the frying fat.

How it's made
Maida and atta blended in a 70/30 ratio, kneaded with ghee until breadcrumb-textured, then bound with cold water and rested an hour. Rolled paper-thin, brushed with more ghee, folded over (this creates the layers), then scored into diamonds. Slow-fried in ghee at a moderate temperature until each piece sounds hollow when tapped.
